An opportunity has arisen for a full time and part-time experienced Chef to join our team at the Long Ashes Leisure Club. We are looking for two individuals to manage and coordinate the day-to-day operation of the Leisure Club kitchen, providing the highest and most consistent standards of food preparation and delivery. You will be responsible for the development of the menu and the GP and will need to ensure that the kitchen and associated paperwork meets the 5-star standard required by the EHO at all times.

Main Duties and Responsibilities

  • Responsible for overseeing the daily operation of the kitchen.
  • Monitor the day-to-day requirements and upcoming events to order ingredients and products correctly, maintaining an adequate level of stock. Accurately record the receipt of goods delivered and immediately report any short or incorrect delivery.
  • Oversee members of the café team who provide kitchen support, managing workloads and responsibilities.
  • Communicate effectively and manage the delivery of the required standards and timings, ensuring the café team delivers exemplary food and service consistently.
  • Encourage an atmosphere of respect and co-working amongst colleagues.
  • Lead, motivate and inspire the café team, driving them to exceed customer expectations.
  • Coordinate staff training and development, ensuring the café team are trained and aware of their roles and responsibilities and are equipped to carry out their tasks effectively and to a high standard.
  • Work with the Park Manager on staff rotas and holiday planning.
  • Work with the management team to plan events and associated menus, analyse sales figures and customer feedback, in order to consistently review and improve our offering.
  • To ensure effective channels of communication at all levels so every member of the team is aware of the customer requirements and objectives and the part they play in the successful delivery of these requirements.
  • Be proficient in the understanding of the law regarding allergens, ensuring that every dish is accurately assessed with the allergens recorded for the café team.
  • Create menus with an innovative approach, considering the requirements of our customers and ensuring that the required GP is met.
  • Work with appointed suppliers to source high-quality ingredients at the best possible price.
  • Take pride in the presentation and quality of food from your kitchen, ensuring the customer always receives an exceptional standard of food.
  • Complete wastage and staff food logs to accurately record GPs.
  • Be passionate about great food, keep up to date with trends in the food industry and optimise kitchen processes.
  • Demonstrate a high level of food safety knowledge and follow recommended practices.
  • Undertake regular audits of all areas within the kitchen and storage areas to ensure complete adherence to agreed policies and EHO regulations.
  • Ensure that all daily, weekly and monthly paperwork is completed in the Safer Food Better Business records.
  • Ensure that all equipment is working safely and compliant with manufacturers guidelines for operation.
  • To maintain the cleanliness and care of the equipment and working areas used in accordance with the standards required by Law and Company procedure.
  • To comply with the relevant duties and responsibilities under the Health and Safety at Work etc. Act 1974, the Management of Health and Safety at Work Regulations 1999 (as amended) and all relevant Codes of Safe Working Practice, policies and other health and safety information relevant to the area of work.

Qualifications and Experience

  • Food Hygiene Certificate Level 2 minimum
  • Excellent understanding of food hygiene regulations
  • A minimum of 5 years experience as a chef in a fast-paced, high volume environment
  • Proven experience in managing a kitchen
  • Be fluent in spoken and written English

About us:

The Gamekeeper’s Inn is a traditional Yorkshire pub with 11 bedrooms and 4 hire-fleet lodges. Alongside our busy 64 cover restaurant and bar, The Netherside Suite can host up to 150 guests, specialising in weddings, but also offering fantastic event facilities accommodating birthdays, funerals, christenings and conferences.

Your new role:

  • Support the Head Chef in managing the day to day operation of the kitchen
  • Be prepared and organised for pub service whilst the head chef focuses on function service
  • Provide high and consistent standards of food preparation and delivery
  • Communicate effectively with the kitchen team to deliver
  • Maintain high levels of food safety and follow recommended practises
  • Manage stock control
  • Be responsible for the kitchen in the absence of the head chef
  • Complete wastage and staff food logs to accurately record GPs
  • Ensure that the required standards of cleanliness, hygiene and safety are followed.
  • Clean and present the kitchen to the standard required by the EHO and support the Head and Executive chef with daily, weekly and monthly paperwork, completed in the Safer Food Better Business records.
  • Report any concerns regarding faulty or damaged equipment or services in the kitchen to the Pub Manager
  • Maintain the cleanliness and care of the equipment and working areas used in accordance with the standards required by Law and Company procedure.

About you:

  • Must be eligible to work in the UK
  • Be fluent in spoken and written English
  • Have experience as a sous chef in a fast-paced, high volume environment
  • Highly organised
  • Thrives working under pressure
  • A flexible approach to working hours
  • Competent understanding of food hygiene regulations
  • Excited to learn new skills and ways of working

Main duties
